Ingredients:

  • 1 pound of split peas
  • 1 cup of cut up ham
  • 1 yellow diced onion
  • 2 cut up leeks
  • 1 minced shallot
  • 1 pinch salt
  • 1 tablespoon pepper
  • 8 cups of chicken broth
  • 1 tablespoon dried thyme

Directions:

  1. In a large pot heat one tablespoon of olive oil and add the ham, crisping it up a bit. When it’s browned, take it off and put it on a plate.
  2. Add the leeks, shallots, and onions to the pot, cook for about 8 minutes until they are tender.
  3. Add the split peas, chicken broth, pepper, salt, thyme to the pot and cook for one hour.
  4. Add the ham back in until warmed.
  5. Voila! Pea Soup!
