Lentil soup is a classic and super easy to make!

It will have you filled up and your whole family will love it.

As the days go by, the soup just gets better and better with the flavors melding together even more, and as it thickens, I like to put it on a piece of toast to have a different kind of meal.  Sometimes I even add some more onions and pieces of ham to make it last a little longer.

What you Need:

  • A bag of lentils
  • 1 tablespoon of olive oil
  • 3 cups of chicken stock
  • 1 onion
  • 2 garlic cloves
  • 1 cup of chopped ham (or sausages)
  • salt
  • pepper
  • cumin
  • paprika

Directions:

  1. Sift through the lentils in the bag to make sure there are no bad lentils or little rocks.  Do this by putting the lentils in a big container with some water, you’ll see some off colored lentils and maybe some other grains that you can throw away.
  2. Dice the onion and chop up the garlic
  3. Put the olive oil in a big pot and when it starts to steam, throw in the garlic cloves.
  4. After 30 seconds, add in your ham and let it get browned.
  5. Next throw in the chicken stock and scrape up the browned bits from the bottom of the pan, it will give you so much flavor in the soup.
  6. When the stock starts to boil, put in the lentils until it continues to boil and then put on a simmer for 45 minutes.
  7. Add in the salt, pepper, paprika, and cumin to your taste.
  8. Voila!  Delicious and easy lentil soup.
