It’s October! One of my favorite times of the year. I love pumpkins and flowers. The mums remind me of my grandmother’s garden and high school football homecoming. I admit I spend most of September mourning the end of summer but once October rolls around and I see pumpkins in the stores I get a little giddy!

I just wanted to share one of my favorite autumn recipes. My youngest daughter loves anything “pumpkin” and is totally all about “comfort food” at our house! This is a fantastic recipe to share with family and friends. It does have 3 cups of sugar, so there’s no way around sharing it! It’s perfect as a loaf or muffin. Here’s the recipe:

  • 3 ½ Cups of all purpose flour
  • 3 Cups of sugar
  • 2 teaspoons baking soda
  • 1 ½ teaspoons of salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 cup of oil
  • 2/3 cup water
  • 4 eggs
  • 1 16 oz can of Pumpkin (2 Cups)
  1. Heat your oven to 350 degrees.
  2. Grease two 9×5 baking loaf pans (or you can make muffins).
  3. Mix all the dry ingredients in a large bowl.
  4. Combine oil, water, eggs and pumpkin in a medium bowl. Mix well.
  5. Pour medium bowl ingredients into a large bowl and beat for 1 minute at medium speed.
  6. Pour batter into greased pans and bake at 350 degrees for 60 to 70 minutes (until toothpick comes out clean).
