  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup all-purpose flour
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup brewed espresso or strongly brewed coffee, cooled

For the Espresso Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons brewed espresso or strongly brewed coffee, cooled

Instructions:

  • Start by preheating your oven to 325°F (163°C) and lining a 9×13-inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later.

2. Create the Crust

  • In a medium bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter. Mix until the crumbs are evenly coated with the butter.
  • Press the mixture firmly into the bottom of the prepared baking dish to form a crust. Use the back of a spoon or a flat-bottomed glass to ensure it’s packed down evenly.

3. Prepare the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until it’s smooth and creamy.
  • Gradually add 1 cup of granulated sugar to the cream cheese and continue to beat until the mixture is well combined.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the canned pumpkin puree, all-purpose flour, pumpkin pie spice, and brewed espresso or coffee. Mix until everything is fully incorporated and you have a smooth, pumpkin-spiced cheesecake filling.

4. Bake and Cool
