Have you cleaned out your pantry yet? That was the first thing I did! I couldn’t believe how many random food items I had just hanging around. Now, at the end of my food supply, I’m turning to my pantry to make sure I can eat it all! Here are some recipes for those random items in the back of your pantry.
Do you have black beans, chicken stock, and canned tomatoes just lying around? Try this black bean soup for a filling nutritious meal that’s also light on the wallet! Everything is optional (except the black beans, broth, and tomatoes; but everything else will just enhance the soup).
Ingredients:
- Olive Oil
- 1 large onion, diced
- 1 red pepper, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger
- 1 tablespoon cumin
- 1 tablespoon salt, plus more to taste
- ¼ teaspoon cayenne
- 1 (28-ounce) can diced tomatoes
- 3 cups chicken broth
- 2 cans black beans (4 to 5 cups)
Directions:
- In a large pot, add a tablespoon of olive oil and heat on medium.
- When the oil is hot, add the onion and cook till translusent, about 6 minutes.
- Add the pepper to the pot and sautee for another 6 minutes.
- Add the diced tomatoes and the chicken stock and bring to a boil.
- Once it’s boiling, reduce to a simmer for 15 minutes.
- Add the black beans and simmer for another 15 minutes.
- Add spices if available.
- Voila!
