This recipe just tastes like the fall. Feel free to add extra vegetables or whatever you have in your fridge. It feeds the whole family and it’s an easier recipe that you can just throw into the oven.

Seasonal veggies really capture the feel for the autumn. Root vegetables are also great for reducing cravings. Colorful starchy vegetables like sweet potatoes, carrots, and beets are packed with anti-inflammatory nutrients and are better for you than those crunchy snacks you crave during PMS.

Ingredients:

  • 2 lbs Chicken thighs
  • 2 tablespoons Olive Oil
  • 3 springs Fresh Rosemary
  • 2 Garlic Cloves
  • 2 cups Brussels Sprouts
  • 1 Sweet Potato
  • 5 Carrots
  • 2 Apples
  • 2 strips Bacon
  • Salt and Pepper

Directions:

  1. Preheat oven to 475 degrees
  2. Put the chicken in a bowl and add the olive oil, rosemary and minced garlic. Season with salt and pepper and mix it occasionally while you prep the rest of the ingredients
  3. Cut up Sweet potatoes into medallions
  4. Peel carrots and then cut into 1 inch pieces
  5. Cut up apples into wedges
  6. Chop each Brussels sprout in half
  7. Add all of the sweet potatoes, carrots, apples, and Brussels sprouts onto a large baking sheet. Drizzle with olive oil and season with salt and pepper.
  8. Top the veggies with the chicken and pieces of bacon.
  9. Roast for 30 minutes!
