Allow me to introduce you to the most decadent dessert of all time, the Merveilleux (Mare-vay-you).

If you haven’t heard of this sweet treat, you’re not alone.

This treat was perfected by a Chef in the North of France, where I first tasted this creation, but is found all around the Flemish region of France and Belgium! Basically what it is, is a meringue, topped and surrounded by chocolate mousse, with chocolate shavings on top. It’s a dessert sandwich!

With the name Merveilleux, which means Marvelous in French, it’s no wonder that this is the dessert we’re focusing in on this month. These sandwiches are the only ones you want for your dessert.

The merveilleux is an amazing mix of different textures; it has the fluffiness of the mouse, the crunch of the meringue, and the melting quality of the chocolate. It’s the sugar overload you need in your life this February, trust me, your taste buds will thank you.

 

For the Chocolate Mousse:

Ingredients:

  • 6 egg whites
  • 1 cup chocolate chips
  • ½ cup butter

Directions:

  1. Start to melt the chocolate chips. Use the microwave and melt the chocolate chips with the butter in 15 second bursts. After 15 seconds, take the bowl out and stir the chocolate.
  2. At the same time, crack 6 egg whites into a bowl, make sure no yolk gets in, or the eggs won’t cream.
  3. Use an egg beater and beat the eggs until they rise like a cloud, you’ll know they’re ready when you can hold the bowl over your head and the eggs won’t fall out.
  4. Fold in the melted chocolate to the whipped eggs.
  5. Refrigerate for 4 hours.

 

For the Meringue:

Ingredients:

  • ½ tsp salt
  • 4 egg whites
  • ¾ cup sugar

Directions:

  1. Preheat the oven to 250 degrees F
  2. Get two baking sheets ready, covered in parchment paper.
  3. Similarly to the mousse, crack the 4 egg whites into a bowl, make sure not to get any yolk in the bowl or the eggs won’t cream! (And use the egg yolks to make crème brulee, check our blog for a great Rose Crème Brulee recipe).
  4. Use an egg beater and beat the eggs until they rise like a cloud, you’ll know they’re ready when you can hold the bowl over your head and the eggs won’t fall out.
  5. Add a third of the sugar specified into the eggs, beat it in until smooth. Then add the next third, and then the next.
  6. Place the egg mixture in a piping bag and make 1 inch circles onto the parchment paper.
  7. Bake for 1 hour or until the meringues are hard and easily peel off of the parchment paper.

Also remember you need Chocolate Shavings to Top the Sandwich!

 

Assemble the merveilleux!

Directions:

  1. Place 1 meringue on a plate, add some chocolate mousse to the top of it, and place another meringue on top of the first, like a sandwich.
  2. Using a knife, frost the sandwich with chocolate mousse
  3. Throw some chocolate shavings on top
