This month we get to celebrate Mardi Gras!  Do you have a favorite tradition for the day?  If you’re celebrating, and even if you’re not, try out this recipe for Beignets, straight from the heart of New Orleans that will have you wanting to toss beads on them for being so delicious!

Ingredients:

  • 1 c. all-purpose flour
  • 1 tsp. baking powder
  • 1 pinch of salt
  • 2 eggs
  • 1/2 c. granulated sugar
  • 2 tbsp. melted butter
  • 1 tsp. pure vanilla extract
  • Vegetable oil, for frying
  • Powdered sugar, for the top of your beignets!

Instructions:

  1. Mix together the flour, baking powder, and salt in a large bowl.
  2. In a separate bowl, mix the egg yolks, sugar, 1/3 cup of water, vanilla, and melted butter all together.
  3. Next, add the flour mixture to the egg yolk mix.
  4. In yet another bowl, beat the egg whites until peaks start to form, and then fold into the batter.
  5. In a pot, heat oil to a simmer.  Drop small spoonfuls of the batter into the hot oil and fry until golden, this should take about 3-5 minutes.
  6. Transfer the golden batter ball onto paper towels to soak up excess grease
  7. add powdered sugar on top!
