Ingredients:
- 1 pound of split peas
- 1 cup of cut up ham
- 1 yellow diced onion
- 2 cut up leeks
- 1 minced shallot
- 1 pinch salt
- 1 tablespoon pepper
- 8 cups of chicken broth
- 1 tablespoon dried thyme
Directions:
- In a large pot heat one tablespoon of olive oil and add the ham, crisping it up a bit. When it’s browned, take it off and put it on a plate.
- Add the leeks, shallots, and onions to the pot, cook for about 8 minutes until they are tender.
- Add the split peas, chicken broth, pepper, salt, thyme to the pot and cook for one hour.
- Add the ham back in until warmed.
- Voila! Pea Soup!
